Over the last year or so, the MacArthur foundation organized a blog of very short reviewing current topics in games and education. This might be a useful "idea file" for your workshop. See: http://spotlight.macfound.org/main/category/c/Ecology-of-Games/ Note that some of it is specific to K-12 education, but some is higher ed (or both).

A lot of the games profiled at G4C (Games for Change) have application in higher education humanities and social science curricula. I would suggest raiding their speaker's list -- it is a good list. http://www.gamesforchange.org/conference/2007/speakers.php
